whew.... it's too hot to cook 'round here!

Here are a few tips to help you "throw" together some sweat-free suppers...


Microwave! 
The most under-utilized thing in most folks’ kitchens….

* Quick poached boneless chicken
to ‘throw’ in the fridge or freezer to quick chop for topping salads


* Fish/shrimp/shellfish…
quick-cook proteins in the micro...not only fast, but preserves flavors
...use these shrimp to 'throw' into your gazpacho (see below) for a spiffy seafood cocktail!

* Corn…
shucked and wrapped in paper towel, 'throw' in microwave for 2 mins
.

* ‘Throw’ some baking taters in there and cook…
Cool, and chop up to make fast potato salad.


* Cook your bacon for those summer BLTs in the microwave, or in my case, BCTs!
I’ve become addicted to cilantro, so it’s my ‘new lettuce’ and makes THE best BCT…
bacon/cilantro/tomato sandwiches, but still m.u.s.t include Duke’s mayo!


Crock Pot…
another great kitchen tool for hot weather cook’n!

* Throw in a chunk o’ pork…your fav, be it butt or loin…
cook it plain or with some of your fav BBQ sauce.  Once done, remove from juice and out of fat to cool… slice and keep in fridge (‘butt’ put some in freezer for a week or two too!) for ‘throwing’ on salads or sandwiches (with freezer slaw, see below)

Blender…
* Gather all your goodies and make yourself some smoothies.
Pour into single serve cups and ‘throw’ into your freezer for ‘grab ‘n go’ goodness when you head out into the hotness!

Wok it…
Hot weather is a great time to dust off that wok!
It cooks hot and fast, and you can ‘throw’ in all sorts of your fav (and abundant) summer veggies… and if you want meat, grab some out of the freezer you’ve already cooked and ‘throw’ in at the end to give it a quick heat-up

Toaster Oven…
Don’t have one?  Well why not? There are usually gobs of them at Goodwill stores.

* Make quick pizzas in them on any kind of bread (while keeping the kitchen cool).
I cook up a few pounds of sausage with peppers and onions every few months and put in zippered bag to have ready to grab a handful and ‘throw’ onto my toaster oven pizzas!

Team cook’n…
Everybody likes to eat, so everybody should pitch in.... each person makes one of the dishes or prepares an ingredient… not only does this speed up supper, but it will be fun family time where you will make memories that will last a lifetime!

* layered salads…
each personal makes/chops up a layer

* gazpacho…
quick to 'throw' together from what’s flowing from your garden
(or your neighbor’s who is leaving stuff on your doorstep)


Cold Salads...

* ‘Southern' Caprese Salad….
Fresh tomatoes, the more colors the better, your fav cheese (doesn’t have to be mozzarella) and sliced juicy local peaches, drizzled with your personal fav dressing...
you'll be delighted at this combo of sweet peaches with tangy maters!

* Quick Chicken Salad…
'Throw' an egg or two in custard cup and poke yellow with a toothpick (so it won’t explode)… cover tightly and microwave about a minute or two till all done… chop to throw in chicken salad…while your egg is cooking, dice up piece(s) of chicken you cooked in micro and threw in freezer for quick meals (chicken salad, to 'throw' on garden salad, into tortillas with some shredded lettuce/tomatoes… endless possibilities!)

* "throw" together egg salad
...use same method as above and cook your eggs quickly in microwave

* Freezer Slaw…
'throw' together a package of broccoli slaw mix from produce section with some slivered peppers and onions… for each bag, boil 1 cup vinegar and about ½ cup sugar and if you have them, 'throw' in some mustard seed (optional)…throw in some pepper and salt if you need it… pour over veggies and ‘throw’ in freezer… when ready to eat, grab out and serve! 
Great salad to take to picnics too and safe to sit out on picnic table.

* Quick 'n Cool Shrimp Salad...
Micro some shrimp or pick up some already-cooked small salad shrimp (thaw).  Cook a couple of eggs in microwave (see above), chop up and 'throw' into bowl of shrimp with your favs… diced onion, peppers, pickle relish and squirt of mayo… generous pinch of sugar… or if preferred, use a creamy honey mustard… and this is better after it ‘cures’ overnight

*Crispy Lettuce Wraps are nice on cold days…
instead of ‘heavy’ bread, put your shrimp or chicken salad into crunchy iceberg lettuce leaves!

* Or, use some of those tomatoes coming from every which way as your ‘vessel!’
Cut a hole in them and ‘throw’ some of your salads inside!

Couscous salads are great this time of year...
The stuff is ready in about 10 minutes (just boil water and ‘throw’ in for 5)… stir in all sorts of goodies!  I like dried apricot pieces, toasted pine nuts (you do keep a jar of those ready in your pantry don’t you?), some fresh chopped cilantro or mint… whatever suits your fancy!

Bean Salads…
open your fav beans, drain and rinse... cut up some tomatoes, peppers, fresh herbs and even cut some sweet corn right off the cob (no need to cook)!  ‘Throw’ in some fav oil (I like sunflower oil this time of year) and fav vinegar… some salt, pepper and any other seasonings you like and let this marinate a few hours…overnight is even better!

Corn salad…
...same ideas as the bean salad, but just use corn if you don’t care for beans


Fresh Crunchy Pickles…
never EVER throw out pickle juice when the jar is empty!  Cut up fresh cucumbers, peppers, onions…your favs and ‘throw’ into the juice.  Let this sit for a spell, a few days is best.  You’ll have the best quick pickles and wonder why you ever threw out juice… if you like pickled eggs, you can put boiled eggs into pickle juice too to slice and put on top of salads.

Bread Salads are tasty...
Take your nearly stale bread and break into bite-size pieces and ‘throw’ into a bowl.  Cut up fresh tomatoes, fresh herbs (basil is good) and any veggies you like… peppers, onions, squash… drizzle with some good olive oil and sprinkle with some good balsamic vinegar!  Toss about and let this sit a spell for the flavors to meld together.  Serve at room temp.
The perfect side would be some slivers of good old NC country ham!  I like to cook strips in microwave until crunchy...


Grill’n...

* Slice up some goodies coming from your garden and skewer them…
'throw' on the grill and baste with your favorite sauce or salad dressing!  These are also reallllly good to eat chilled right from the fridge when you want something crispy and salty….
Think healthy ‘potato chips’

* When grillin’, cook extras for another meal or two…
meats to slice up for salads, burritos, etc.   Or to 'throw' into frittatas or omelets!

And of course, we need cool beverages…
* ‘Throw’ some grapes into the freezer to have nice frosty nibbles or for ‘throwing’ into glass of wine or sangria to chill.
